and most likely my last. yuck, i do not like banana cream pies. no wonder i hadn't attempted one in the past. although - it was really easy, and i think if i substituted a different fruit, it could be quite delicious... perhaps peaches? my mom said that rhubarb would work too... i mean, it was just a simple custard poured over the fruit in a graham cracker crust. it would probably be easy to make it into a chocolate cream pie too... maybe pour it over chocolate chunks or oreo cookie crumbles or something...? yes/no?
anyway, all i know is that i was not a fan. but - BUT! - i was told by many people that they enjoyed it. and linds (whose going away party i baked for) really enjoyed it. so i guess that is all that really matters ;)
i suppose you'd like to know how exact i made this little gem, huh? well, the pie followed ellie krieger's recipe (except i used 1 c. whole milk + 1/2 c. cream instead of low fat for the custard). and my whipped topping was a little different. i mixed 1/2 an 8 oz package of cream cheese with 1/4 c. sugar, 1/2 tsp. of vanilla, 1/4 tsp. almond extract and 1 c. heavy cream. all whipped together, you get a whipped cream frosting that won't melt in the heat :) it looked fabulous until it was cut into!
