chocolate chip, peanut butter, oatmeal cookies

i had a craving for cookies last week, and i decided, for some reason unknown to me, that i had to have peanut butter oatmeal cookies with chocolate chips - i had to. unfortunately i couldn't find a recipe that i liked, so i made-up my own. well, that isn't entirely true; i based the recipe off of a peanut butter oatmeal cookie recipe (sans the chocolate chips) i found on the internet.

anyway, the recipe and photo results are below.


Ingredients:

1 Cup of Margarine
1 Cup of Brown Sugar
¾ Cup of Granulated Sugar
3 Large Eggs
2 Teaspoons Vanilla
2 Cups Peanut Butter
2 Cups All-purpose Flour
2 ¼ Cups Instant Oats
1 Teaspoon Baking Soda
½ Teaspoon Cinnamon
½ Teaspoon Salt
2 Cups Chocolate Chips
1 Cup Crushed Peanuts

Directions:

Preheat oven to 350o. Whisk together flour, oats, baking soda, cinnamon, and salt; est aside. Cream together butter and sugars in a separate bowl. Blend in eggs (one at a time works best). Mix in vanilla and peanut butter. Combine sugar mixture with dry mixture. Add chips and peanuts last.

Line cookie sheets with parchment. Drop dough in 2” discs on to the cookie sheets (flattening them into discs, rather than balls, helps them bake evenly). Bake for 10 – 11 minutes.
