impromptu eggbake

hunger drives a number of my random creations. here you can see what a near-empty pantry can produce (ps - it helps to have roommates to mooch ingredients off of).

make a graham cracker crust, only use a savory cracker (saltine, club, or ritz) and garlic powder instead of sugar. press this in the bottom of a 9x9" baking pan. then take milk or cream, 4 or 5 beaten eggs, 1 1/2 cups shredded cheese (i used cheddar), couple cups chopped spinach, and some s&p - mix them together and pour into the pre-baked crust. top the concoction with more shredded cheese (used a mix of yellow and white shredded cheeses i found in the fridge) and sprinkle french's fried onions on top (you know, the stuff you put in green bean casserole). cover with tinfoil and bake for 20 - 30 minutes covered and then an additional 10 - 15 minutes uncovered. the onions will be crispy and the cheese will be brown and bubbly.



if you have ground beef or diced ham, that would be a tasty addition. bacon would be divine as well! and i think mushrooms might be fun(gi)!
