did you know about my love for ...

ice cream??!!??

well, if you didn't, you really should. and to feed my addiction, i recently purchased an ice cream maker. one of my friends posted on facebook that she wanted one, and that got me thinking - why don't i have one. so i went to amazon and looked at prices. i really wanted to get the kind i could hook-up to little martha, but they were a little pricey. so i settled for a very basic hamilton beach model. no complaints yet (other than the fact that it is large. i have to keep it in the living room under an end table - ha!).

so my first batch? coconut ice cream, of course. i really <3>like the texture. so here's the recipe (courtesy of all recipes) i followed for my first go -

ingredients

1 cup milk
1 (14 ounce) can cream of coconut
1 1/2 cups heavy cream
1 1/2 cups sweetened flaked coconut (optional)

directions
combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. stir in cream and flaked coconut. pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions.

the second batch i made was a burnt sugar ice cream (which, due to tuesdays with dorie, is quite the popular). i can't remember which recipe i used, but they are mostly the same. it is a really unique (and good!) ice cream flavor. just google it and take your pick of recipes. (i added almonds to mine.)
