got a cold? got soup?

i might have been out sick the other day, but i was rather productive. i decided that i needed to have some good old fashioned chicken soup to combat my cold. so, i bought a rotisserie chicken from the grocery store (they are only $5 on fridays at the giant down the street from my apartment). i removed the meat and shredded it, used the fat and bones to make a stock, and added a variety of on-hand veggies into the mix (carrots, leeks, onions). then i spiced it up and let it simmer. i also decided homemade noodles were in order - so i whipped up a batch:

one tasty bowl of soup. though, i'be been eating it for days (since i made a HUGE stock pot full of it - i'm not complaining too much).

in my experience, homemade chicken soup freezes and reheats beautifully. there's only so much soup a girl can eat over a given time.
